Schouten introduces plant-based fillet with innovative fibre technology
Schouten Europe introduces a new plant-based fillet based on a proprietary fiber structure. This innovation delivers a firm, meat-like texture and makes the product less processed. It also results in a lower environmental impact. With this, the Dutch family company takes another step forward in the development of meat alternatives.

Lower environmental impact
Within the meat alternatives category, attention to production methods and ingredient sourcing is increasing. For example, the texturization process requires relatively high energy input, and texturized ingredients are often produced outside Europe. “Texturization is the process in which protein is transformed into a fibrous structure that resembles meat,” explains Niek-Jan Schouten.
Meat alternatives already have a clear environmental advantage over meat. With its fiber technology, Schouten builds on this and further reduces environmental impact. “Internal analyses indicate a potential reduction of approximately 10–30%, depending on product formulation and the supply chain.”
Colour and bite
The new plant-based fillet stands out for its juiciness and light, chicken-like colour. “Meat alternatives sometimes require the right preparation to prevent dryness. This fillet remains juicy and firm during use. This allows us to offer a product that truly performs in practice and moves the category forward,” says Schouten.

Product features and applications
The 95 gram plant-based fillet combines a Nutri-Score A with a high content of protein and fibre. The recognizable shape is achieved using applied 3D shaping technology. “The product performs strongly in hot applications and marinates well. A marinated version is available for chilled applications. The product can also be enriched with iron and vitamin B12,” concludes Niek-Jan Schouten.
